The Italian musical term Adagio implies a sense of being in in sync, or harmony. Our Adagio releases are somewhat unusual, in that Italy is not noted for producing premium white wine blends (nor perhaps is the world in general).
Our feeling is that what a white blend loses in varietal personality, it gains in the range of dishes it can accompany.
Vintage 2014 was a challenging one for white wine varieties, and we were unable to allocate any estate grown fruit to the blend. Accordingly, we used Pinot Grigio from Orange and Mudgee Chardonnay.
Each component of the wine was vinified separately, to ensure varietal integrity before blending.
In the winery, gentle processing of the fruit and cool fermentation has ensured vibrancy and fruit freshness. At the completion of fermentation, the wine was clarified, stabilized and blended.
There was some use of new French oak in respect of the Chardonnay component.
The 2014 Adagio is true to its component varietals, delivering peach (courtesy of Chardonnay), pear and tropical fruits (from the Pinot Grigio) to both nose and palate.
We consider this wine to be well matched with a range of dishes from light Asian curries to chicken salad or more complex seafood.
