The Wine

Vin Santo is a cult wine of Tuscany, served to guests after dinner as a gesture of generosity and friendship. The word Appassimento describes the process by which loose bunches of grapes are raisined in the sun, on racks until the flavours and sugars are concentrated.

Winemaking

The fruit is hand picked and placed on racks, where it was left to dry for 6-8 weeks until the bome is 25+. The raisined fruit is then removed, sorted and pressed directly to a 100 litre barrel.

There are no additions of any kind. The wine is simply left to ferment by itself. It finishes fermentation after approximately 18 months. the wine was deliberately left on ullage to delevop a nutty, “rancio” character. No sulfur dioxide is added.

The wine remains in barrel for 3 years, and is hand bottled. Analysis pH 4, Residual sugar 250+ g/L1, Alcohol 7.4%

Tasting Notes

Served to guests after dinner as a gesture of generosity and friendship, our Appassimento is made from raisined Vermentino and Aleatico. Rich, dense and indulgent with flavours of raisin, apricot/marmalade, toffee and honey. Traditionally served in a glass with almond biscotti. Less than 300 bottles made.
