Viticulture and Harvest
The 2021 Vino Rosato is our classic rosé, made from the first run juice from our Sangiovese. The vines were fruit thinned prior to versaison (colour development) so as to increase the intensity of fruit flavour. The fruit was machine harvested in early February.
The fruit is crushed and pressed, with the free run and pressings components kept separate. The juice fermented in steel with an aromatic yeast at a low temperature to preserve ferment characters.
Vino Rosato is our classic rosé, made using Sangiovese. Light and fresh, with a dry finish, the wine delivers lifted flavours of spicy cherry and strawberry. A great lunch time wine for red meats, especially vitello tonnato. For my taste, the colder, the better, on a hot day!
