The wine is vinified and prepared, then sent for carbonation at Petersons Champagne House. For this release, we used 100% Cannonau (usually Barbera).

Vivace! in Italian is another word for lively. This sparkling Cannonau has notes of plum and cherry synonymous with the variety and the combination of its light tannins and high acidity produce a very 'drinkable' juicyness. This wine has quite a gentle palate of bright red fruit which goes particularly well with salami, proscuito and a rich pizza with a varierty of savoury flavours.
